Summer Vegetarian Chili
Ingredients:
- 1 c Red Onions 1 onion, chopped
- 1 Bell Peppers chopped
- 1 Zucchini chopped
- 1 c Mushrooms chopped
- 1 bunches Fresh Cilantro chopped
- 5 cloves Garlic crushed or minced
- 2 tbsp Olive Oil extra-virgin
- 2 tbsp Chili Powder or more to taste
- 2 tsp Cumin ground
- 29 oz Diced Tomatoes 2 - 14.5 ounce cans
- 15 oz Canned Black Beans drained
- 1 c Vegetable Broth
- 1 c Canned Corn kernel
- 0.25 tsp Cayenne Pepper Flakes or more to taste
- 1 tsp Sea Salt
- .5 tsp Ground Black Pepper
Instructions:
- Heat oil in medium pot.
- Add onion, garlic, chili powder and cumin.
- Saute over medium heat until onion is soft, about 5 minutes.
- Add remaining ingredients and stir.
- Bring to a boil, then lower heat and simmer 20 minutes or until vegetables are soft. Add more liquid if needed.
- Serve with your favorite toppings.
