Spinach Salad with Chopped Eggs
Ingredients:
- 4 c Baby Spinach washed and dried
- 1 c Radishes quartered
- 4 Eggs boiled
- 3 tbsp Red Wine Vinegar
- 4 tbsp Olive Oil
- 1 tsp Maple Syrup
- 1 tsp Sea Salt
- .5 tsp Ground Black Pepper
Instructions:
- Slice the boiled egg into pieces and set aside. While the eggs are cooking, fry the bacon and remove to a paper towel to drain, reserving 3 tablespoons of the rendered fat. Crumble the bacon and set aside.
- Place the spinach into a large mixing bowl and set aside.
- Whisk in the red wine vinegar, olive oil, and maple syrup together. Season with a small pinch each of kosher salt and black pepper.
- Drizzle over salad and serve.
