Zucchini Pasta with Avocado Cream Sauce

Ingredients

  • 4 zucchini medium, spiralized
  • 1 avocados
  • .5 cucumbers chopped
  • .5 lemon juiced
  • 2 cloves garlic
  • 2 tbsp full fat canned coconut milk
  • 1 tsp sea salt
  • .5 tsp ground black pepper
  • 1 c cherry tomatoes
  • .5 c fresh basil about 8 leaves, thinly sliced

Instructions

  1. Place zucchini spirals in a large bowl.
  2. In a food processor, combine the remaining ingredients except for tomatoes and basil and process until smooth.

  3. Toss the zucchini with the avocado sauce until fully coated.
  4. Garnish with cherry tomatoes and basil leaves, season with more salt & pepper to taste.
