Vegetarian Mushroom and Onion Tacos

  • 2 c red onions 2 onions, medium, sliced
  • 6 mushrooms sliced
  • 2 tbsp coconut oil
  • 3 tbsp taco seasoning
  • 3 tbsp water


  1. Heat a large skillet over medium-high heat and add 2 tbsp coconut oil.
  2. Add the onion and cook, stirring occasionally, until brown. Add sliced mushrooms.
  3. Cook 6 to 8 minutes or until tender. Reduce heat to low.
  4. Add taco seasoning mix and water. Cook about 5 minutes or until water is absorbed. Remove from heat.
  5. Spoon filling into tortillas. Add your favorite toppings and serve!
