Veal & Bacon Meatloaf

  • Preheat oven to 400F.
  • Place chopped carrots celery, onion, and 1 slice of bacon in a food processor. Pulse until vegetables and bacon reach a fine mince.
  • Place vegetable mixture in a large bowl. To the vegetable mixture, add veal, egg, coconut flour, coconut aminos or tamari, mustard powder, marjoram, sea salt, and black pepper. With clean hands, mix well to combine.
  • Transfer meatloaf mixture to a 5x9 inch loaf pan. Place the remaining 3 slices of bacon on top of the meatloaf.
  • Place in the oven and bake for 60 minutes.
  • Remove from oven and let cool. Serve with your favorite side dish.
