Tiger Nut Energy Bites
Ingredients:
- .5 c Tigernut Flour
- .5 c Coconut Flakes unsweetened
- .25 c Coconut Oil
- .25 c Collagen Peptides
- 8 Medjool Dates pitted
- .25 tsp Cinnamon
- .25 tsp Sea Salt
Instructions:
- Place all ingredients in a food processor or bullet blender. Process until well blended and combined, stopping to scrape down sides as needed.
- Shape into 12-13 balls with your hands.
- Place balls on a plate or small sheet pan and put into freezer for about 10 minutes, or just long enough to firmly set.
- Store in a sealed container in refrigerator or at room temperature
