Slow Cooker Paleo Lechon Asado

  • Thinly slice onions and mince garlic. Set aside.
  • In a small bowl, whisk to combine garlic, orange juice, lime juice. oregano, salt, and pepper.
  • With a sharp knife, make 1-inch deep slits into all sides of the roast to help the marinade penetrate. Roast can be cut into 2 or 3 smaller pieces to fit into the resealable storage bag or slow cooker.
  • Place roast in a large resealable zipper storage bag. Add onions and marinade, making sure roast is completely covered with marinade. Remove as much air as possible from the storage bag and zip to seal.
  • Place in refrigerator and let sit overnight.
  • When ready to cook, place roast, onions and marinade in slow cooker. Discard or hand wash and reuse storage back.
  • Set slow cooker to low. Cook for 8 to 10 hours or until meat is fork tender and shreds easily.
  • Carefully remove roast from slow cooker and place on a platter or large plate. Shred roast with two forks into bite-size pieces. Add desired amount of cooking liquid to shredded roast, to taste. For either method: when roast is done, remove, shred with 2 forks, and mix with some of the liquid that cooked out to keep it nice and juicy and flavorful. Serve with lime wedges and enjoy!
  • Serve shredded roast with your favorite side dish.
