Hearty Vegetarian Pumpkin Chili
Ingredients:
- 1 tbsp Olive Oil
- 1 c Onions 1 onion, chopped
- 1 Carrots chopped
- 1 Bell Peppers chopped
- 3 cloves Garlic minced or pressed
- 1 tbsp Coconut Aminos Or Tamari
- 3 tbsp Chili Powder
- 1 tsp Cumin
- 14.5 oz Diced Fire Roasted Tomatoes 1 can
- 1.5 c Pureed Pumpkin NOT canned pumpkin pie
- 2 c Vegetable Broth
- 14.5 oz Canned Black Beans 1 can
- 1 tbsp Lime Juice
Instructions:
- In a large soup pot, heat the oil over medium heat.
- Add the onion, carrot, and bell pepper and sauté them until they begin to brown, about 5 minutes.
- Stir in the garlic and spices and cook for 30 seconds.
- Stir in the tomatoes, pumpkin, broth, and beans. Reduce the heat, then cover, and let that simmer together for about 15 minutes.
- Turn off the heat and stir in the lime juice. Serve right away with your favorite toppings.
