If you’ve never been a fan of meatloaf, give this one a try! Often times meatloaf can either be dried out or loaded down with processed dried soup packets.  Neither is much of an argument to make this dish a favorite.  This one however is so savory and full of flavor, you just might become an instant fan!

Caramelized Onion Meatloaf

Ingredients:

  • 1 pound grass fed ground beef
  • 2 small-medium sized onions
  • 1 tablespoon coconut palm sugar
  • 1 egg
  • 2 tablespoons butter or coconut oil
  • 1/2 cup tapioca flour
  • 1 teaspoon minced garlic
  • 1 teaspoon Worcestershire
  • 1/4 cup organic ketchup (look for natural sweeteners or unsweetened)
  • 1 teaspoon preferred seasoned salt

Instructions:

  1. Preheat oven to 350 F.
  2. Over medium heat on stove top, combine diced onions, butter, and coconut sugar in a skillet.
  3. Cook until browned and caramelized, remove from heat.
  4. In a separate bowl, combine beef, egg, tapioca flour, garlic, Worcestershire, ketchup, and seasoned salt.
  5. Lastly add onions in reserving 2 tablespoons for top.
  6. Put meat mixture into greased loaf pan.
  7. Top with an extra drizzle of ketchup and reserved onions or leave bare.
  8. Bake for 45 minutes or until cooked through.
